Simple Delicious Dinners | Basic Kedgeree

A really simple dinner...
Dinner. Tea. Supper. Whatever you call it, for most 9-5 workers it is the main meal of the day. I tend to start my mornings with a coffee… then eat something dull and uninspiring for lunch. For me, dinner’s where it’s at. The thing is, despite it being my favourite meal, on work nights I’m the last person to slave in front of a hot stove. To be honest, I would rather watch TV and read blogs, because I’m tired and hungry and lazy rushed.
Meals that combine fun with cooking and a relatively quick prep time are my ideal. So, I thought I’d occasionally share a recipe when I do just such a meal – usually made and on the plate in 20 minutes, in real life, in my kitchen.
Kedgeree
Ingredients:
- 1 mug White rice, boiled and drained (if you’ve got more time, I actually prefer brown rice)
- Peppered smoked mackerel (4 fillets)
- 1 diced onion
- Medium curry powder
- Salt/Pepper
- Tomatoes
- Boiled eggs
As for the execution?
Fry the onions in butter (with a touch of oil to stop them burning) until soft, and then add 2-4 tablespoons of curry powder (to taste). Stir through, then add the peppered mackerel, chopped roughly and with skin removed. Stir through the white rice so everything is nice and yellow, add salt and pepper to taste.
Serve with boiled eggs cut into wedges and arranged around the outside of the plate, alternating with wedges of tomato. Finish with a squeeze of lemon if you have on, et voila!
See, could it be more simple?!

Love Kedgeree. A really nice vegetarian alternative is using pumpkin. Yum!
Mm, sounds delicious, I shall have to try that! Butternut Squash would probably work too…
